It was so exciting to finally get all our mesquite pods ground into flour today - our first time. We obtained about 5lbs+. We will package some for the freezer, relatives and are eargerly reviewing recipes to try. I'll keep you posted. I think mesquite brownies will be first.
We enjoyed the mesquite coconut cake at the market today and while there purchased some yummy bread, veggies and tamales. We ate some tamales at lunch and couldn't resist having them on the side our homemade chilli and home grown zuccinni.

I agree, it was great, I came away with about 3 pounds of mesquite flour. My husband bought home 2 pumpkins and is eager to have me make some pumpkin cookies.
Is there anyone out there who has a good recipe? Every time I do a google search I get chocolate chip cookies.

I just made pumpkin oat muffins last night. Haven't tried cookies yet. Let us know if you find a good recipe.

Thanks for coming to the milling everyone - on Saturday alone over 400 gallons of beans were milled!! As you know that's a lot of flour!

What do you think about a mesquite and carob bake off? Maybe hold it down at the Phoenix Public market and get a few 'celebrities' to sample it and vote on what they liked best?? More for an awareness and just something fun to do!

Interesting bake-off. I'm thinking it would be nice to make some mesquite flour goodies to donate to a shelter or such. Giving back what was freely gleaned.

Dana - that is also a good idea! However, I think it would need to be made in a commerical kitchen due to health codes..... I was trying to work around that...

Ahhh! I missed it. I've been looking for mesquite flour for years. I make waffles from scratch and suspect mesquite waffles would be great. Try this recipe and let me know how it works.

1 egg, 1 tsp vanilla, 3 tbs granular sugar (maybe less if mesquite flour is sweet enough), 3.5 oz melted butter (adjust amount to flour consistency), cinnamin, 1/2 cup of flour; Warm all the ingredients to room temp and melt the butter. Dissolve sugar completely. Combine together and put in the waffle iron. Makes 2 rectangular waffles or maybe 1 belgian.
