Looks like a fungus of some sort.
If your plants seemed OK, then I would assume that the fungus is OK to have.
So many fungus amongus.
I'm not sure, but they sound like the larvae for June Bugs (Beetles) called White Grubs..here's a link to the Master gardener site describing em..

Yes as you dig remove them as you did for duck Sushi
They are refered to as White Grubs and eat roots
